Crispy Spinach Patties with tahini dipping sauce

Serves 4

Ingredients: (see vegan version below)

  • 4 cups of chopped spinach

  • 2 tablespoons of Driana Foods White Mojo or 1 minced garlic and 1 small scallion chopped

  • 1 tablespoon of falafel mix

  • 1/4 cup of Parmesan cheese or nutritional yeast

  • 2-3 eggs

    Salt and pepper to taste

  • 1/2 cup of seasoned breadcrumbs or rice crumbs

Preparation:

  • In a small bowl mix White Mojo, with eggs salt and pepper and whisk well set aside.

  • In a large bowl add the chopped spinach and the falafel mix and the Parmesan cheese or nutritional yeast

  • Add the egg mixture

  • Form patties

  • Toss with breadcrumbs

  • Pan fry until golden brown

  • Add to lunch boxes or as a side dish

For the vegan version:

Omit the eggs and add a 1/2 cup of falafel mix and 1/4 cup of water.

Ingredients:

4 cups of chopped spinach

1 minced garlic

2 tablespoons of Nutritional yeast

1/2 cup of falafel mix (Trader Joes’s is recommended)

1/4 cup of water

Preparation:

Add the chopped spinach to the bowl, add the nutritional yeast and falafel mix, garlic, pinch of salt and pepper to taste toss well

Add the water mix well. Let the mixture stand for about 20 min

Cilantro Lemon Dipping Sauce:

1/4 cup of Tahini

Juice of 2 lemons

1 garlic clove minced

3 tablespoons of water

1 tablespoon of honey

2 tablespoons of Driana Foods Cilantro Caper Sauce Green Mojo

Pinch of salt

Preparation:

Mix all ingredients together on the food processor and adjust for salt if needed
