Umami Salmon with Green Mojo
Ingredients:
12-16 oz Salmon Fillet
1/4 cup of Olive Oil
1/4 cup of Soy Sauce
3-4 Tablespoons of Lime Juice (2-3 Limes)
1 sprig of fresh Rosemary chopped small
2 teaspoons of Green Mojo
2 tablespoons of fresh grated ginger root
2 chayote squash (optional)
1 tablespoon of honey or agave
Preparation:
Preheat oven at 400F
Take a measuring cup and mix all ingredients together like a marinade. Place salmon in an oven safe container and pour marinade over salmon and leave it for about 30 min. Not overnight because limes will cook the salmon.
Place salmon in a sheet pan lined with parchment and bake for 12 min. Broil for 3-4 min so it is nicely caramelized.
Salmon should be opaque all the way thru, but soft and buttery, don't over cook it otherwise it will be dry.
Wash squash well and cut in half and remove pith, boiled in salted water for about 20 until tender.
Serve with Chayote Squash drizzle with olive oil. Enjoy with a Pinot Noir which is a great match to asian flavor profiles like this dish.
